SKINNY CARROT CAKE

Here's a recipe for a yummy but skinny cake!
You might think the cake will be dry since there's
no oil but it actually stays nice and moist because
of the amount of carrots.
I made my cake without frosting.
I got 10 pieces, each one contains about 95 calories.



You'll need:

2 eggs
1.5 dl light brown sugar
2 dl flour
1 1/2 tsp baking powder
3 tsp cinnamon
2 tsp cardamon
3 dl grated carrots
A pinch of fresh grated ginger

Frosting
80 g Philadelphia light
1 1/2 dl icing sugar
1 tsp vanilla sugar

This is what you do:

Put the oven on 175 degrees °C.
Use a round baking tin with detachable bottom.
Peel and grate the carrots roughly.
Whisk eggs and sugar thoroughly with an electric
whisk.
Mix the dry ingredients and pour it into the egg
mix and whisk until smooth.
Add the carrots and ginger.
Bake in the middle of the oven for about 30 minutes.

If you want frosting on the cake then let the cake
cool down and mix the three ingredients and spread
it onto the cake.

Å underbart! Jag blir galen av att inte få fika med jobbarkompisarna på fredagarna!

Ledsen att det är länge sedan jag kikade in hos dig, har inte tid att surfa runt så mycket...
